Emzi's Low-Carb Journey
I'm a young married woman on a Low-Carb mission!
Monday, April 28, 2008
Well, since it's Monday it's time for the weekly weigh-in... Dun Dun Dun!!!! So, I have a loss of 2.2lbs this week. I was definitely hoping for a bigger loss since it was my first week back to LC. But, AF showed on Friday night & I've been all blah since. Hopefully I'm just retaining a little extra water weight right now & getting rid of it will help for a bigger loss next week!
I love too cook, so I've been doing a lot of recipe searching lately. I've found tons of recipes that I am really interested in trying out! So, I'm looking forward to trying them out! :) That's really something that has gotten me excited...something to look forward to I suppose!
Good news, Hubby has been talking a lot about starting a diet. He said that he is interested in trying the Low Carb diet with me, but isn't sure how well it will work because he doesn't like vegetables (except corn & potatoes). I really wish he woud just TRY some new veggies. I'm sure he'll be able to find something that he likes, but he's adamant that he won't like anything. Ugh! It's like trying to get a toddler to eat their veggies! LOL Now, me on the other hand...I love veggies...not all of them, but I'll try most anything at least once!
Well, I hope everyone has a wonderful Monday & good weigh-ins this week!

My Hubby and I are FINALLY back out on our own again. We've been in our new apartment for 4 weeks TODAY! Hubby is thoroughly enjoying his job! It's been so nice to be able to spend uninterrupted time with Hubba-Loo. We've been able to patch-up any gaps that may have been created while living at his parents house...Nothing major just reconnecting as a young, married couple. FYI: Our marriage was NEVER in danger, so don't what I said wrong! LOL
I am back to eating low carb as of Monday, the 21st. I am very disappointed in how high my weight reached this time. My weight Monday was the highest it's EVER been. I am not happy with myself at all. This morning the scale said I was down 3.8lbs, so I am very excited about that!
I am hoping that my Insulin Resistance doesn't make it hard to lose the weight as I am not currently on any medication. I will be as soon as our new health insurance kicks in.
I've done well with eating LC this week except I had a bit of a cheat last night. I'm not going to stress about it because it'll only make things worse. I am human and I make mistakes.
Well, I just wanted to give a quick update on how I'm doing. So, this is all for now!
Sunday, March 2, 2008
Well, I can hardly believe that it is March. February was such a horrible month with dieting and weightloss. I know that I don't even have an overall loss for the month of Feb. I'm not surprised though.
It seems as though Low-Carb has been temporarily put on hold. I am just going to focus on healthy eating and try not to eat too many carbs. My current living conditions do not allow for me to fully customize my diet the way I would like.
Good news though! Hubby and I should be out on our own again soon! I truely cannot wait! We would have to relocate 2 1/2 hours from where we are living now, but that'd be ok. We'd be right near the middle of the state. My family is in Northern Indiana and Hubby's in Southern. We'd be pretty much right in the middle! Anyhow--I miss the days of it just being Hubby and me! Plus, a certain someone has told me that I can get myself 2 kitties when we move out! :) Yay!
Hubby has an interview for a full-time position at a prison near Indianapolis. It is very, very promising! It is at an Education Re-entry Program. He is really excited about it. If he were to get the job we'd be right back where we were before Hubby lost his job last July.
Speaking of Hubby...Wednesday (March 5th) is our anniversary. I can't believe that it's been 4 years already. He is so wonderful to me. Hubby took me out to O'Charlies for lunch--were we ate dinner on our wedding night (we eloped! hehe). It was very yummy!
I got presents today too! I got two really pretty necklaces! A couple fill-it-in puzzle books (my fav) and Sims Stories for the laptop!
I can't believe how much further I fall in love with him everyday...My love just grows and grows! It is amazing how much I look forward to spending the rest of my life with him! I could not imagine my life without him.
I know...mushy, mushy! *blushes* Hehe!
Well, I just thought that I should give an update. Take care everyone!

I have now been cheat free for over 1 week! I am super excited about that! :)
I don't have much else to report, so this is all for now! :)

I am not on day 6 w/ no cheats! I am so excited :)
I am hoping for a loss this week. Although, if I don't lose I wouldn't be surprised. For some reason I just can't get my appetite under control. I'm not eating out of boredom either. I'm eating because I feel absolutely starved all the time.
I have a feeling it might be because where I'm living we never have "real" meals. Plus, they always eat fried foods...so then I don't eat what they're having. *sigh* Good news though, Hubby and I will be moving out soon & then we can get back into our routine of good, holesome foods!
I think I've been eating too much cheese & peanuts. They really aren't trigger foods, but I usually have them for a snack or I'll sprinkle shredded cheese on my foods (not too much). I wonder if those foods are holding me back?
All I know is that I can't wait to get back out on my own & start trying out some of the wonderful recipes I've found online!
Well, this is all for now. I weigh in on Tuesday & I hope to have a good report to post!

Anyhow--It seems as though I am keeping my calories anywhere between 1100 & 1300 per day. I think that is very acceptable for me. I have yet to be ravenous for food...I seem to statiated most of the time.
B-taco meat, shr. cheese, taco sauce
L-stew beef & a few carrots (family had homemade beef stew tonight)
D-lettuce wraps w/ turkey, shr. cheese, pickle & yellow mustard, Carb Master Yogurt(kroger)
S-2 hot dogs (bad choice...)

Ok, so my carbs are a lot higher today that I would have liked them to be. I know for a fact that it was the carrots and those danged hot dogs. The thing with the hot dogs were that it was a quick fix. I love raw hot dogs--gross, I know! But, it's something that I have enjoyed since I was a child and besides they are pre-cooked!
So, my guess is: find a new quick fix or a "healthier" hot dog. I have eaten the Jennie-O Turkey dogs before & they are very yummy! My guess is that I will be going back with Jennie-O! They have amazing products anyway. So, just for fun let's compare the hot dogs I ate today with the Jennie-O Turkey dogs. Hah! I have nothing better to do anyway!
Bad-For-You-Dogs

Jennie-O Turkey Dogs

Clearly the Turkey dogs are better.
Ok, so if you haven't noticed I don't have much of a life! Haha. Here it is Friday night and I am sitting at home blogging about freakin' hot dogs. Whoa, aren't I the exciting one? Yes, I am. I am the master of cheap entertainment!
Have a good night ya'll!
